Chardonnay Shrimp Tacos

Tacos and tequila are pretty standard, but what about tacos and Chardonnay!? We've done just that this month with Chardonnay marinated shrimp tacos, deliciously paired with our Spicy Hawaiian wine cocktail!

Ingredients
  

Shrimp and Marinade

  • 12 Shrimp
  • 6 Tortillas (corn or flour)
  • 1/2 Cup Oak Creek Vineyards Chardonnay
  • 1/2 Cup Olive Oil
  • tbsp Lime Juice
  • 2 tbsp Oregano Chopped
  • 1 Jalapeño Sliced
  • 1/2 tsp Salt
  • 1/8 tsp Black Pepper
  • Red & Green Cabbage
  • Cotija Cheese Grated

Wine Marinated Onions

  • 1/2 Large Red Onion Thinly Sliced
  • 1/2 Cup Plain Greek Yogurt
  • 1/2 Cup White Vinegar
  • 1/4 Cup Oak Creek Vineyards Chardonnay
  • 1 tsp Fresh Oregano Chopped
  • 1/2 tsp Sugar
  • 1/8 tsp Salt

Avocado Lime Crema

  • 1 Large Rip Avocado Halved & Pitted
  • 1/2 Cup Plain Greek Yogurt
  • 1 Garlic Clove Minced
  • 2 tbsp Lime Juice
  • 1/2 tsp Salt
  • 1/8 tsp Black Pepper

Instructions
 

Avocado Lime Crema

  • Combine all ingredients into food processor and process until completely smooth.

Wine-marinated Onions

  • Thinly slice red onions and combine all the ingredients into a container or mason jar.
  • Mix all ingredients in the jar and place in the refrigerator for 8hours, 2 at minimum.
  • When prepared, top on tacos, and store leftovers in the fridge.

Shrimp

  • Combine peeled and de-veined raw shrimp in container with ½ cup Oak Creek Chardonnay, olive oil, lime juice, oregano, chopped jalapeno, salt and black pepper.
  • Leave in the fridge to marinate for ideally 8 hours.
  • When ready to cook, put the shrimp in a pan with a small amount of the marinade and cook until shrimp are light pink and cooked through.
  • Heat tortillas in skillet and place 2 pieces of shrimp in each tortilla with cabbage, pickled onions and crema to top.
